Peach Mango with Shrimp

Butternut Mustard Basmati Rice 

This recipe is from Chef Michael at the North Raleigh Whole Foods

Ingredients:
1 1/2 cups white basmati rice
3 cups 365 vegetable broth

1 tablespoon Earth Balance Spread
1 teaspoon whole cumin seeds
2 teaspoons kosher salt
1 large shallot, minced
2 cups peeled butternut squash, diced
1/2 cup Simply Southern Gourmet Roasted Pineapple Cranberry Pepper Mustard

Directions:
In a medium saucepan, melt the Earth Balance Spread. Add the cumin and cook over high heat until the seeds begin to pop, about 30 seconds. Then add the shallot and saute for about 3 minutes. Add the rice and diced squash and stir to coat with the Earth Balance mixture. Add the broth and salt and bring to a boil.  Cover and cook over very low heat until the squash is tender and the broth is completely absorbed, about 15 minutes. Remove from the heat and let the rice stand, covered, for 5 minutes. Fluff the rice with a fork and fold in the mustard. Serve hot.
